Quick and Easy Dinner Recipes
Serve Super Quick Meals Your Kids Will Eat

By Jennifer Wolf, About.com

There's no question that your time together in the evenings is limited. There's a lot to do - between homework, chores, and squeezing in some quality time - and yet you also want to make sure your kids eat a good meal in the evening. Here are some recipes from the Guides on About.com's Food & Drink Channel that will enable you to have dinner on the table in minutes:

Spinach Quesadillas

These are delicious and super-quick to put together. Try experimenting with different flavored tortillas and different cheeses, too, to find the combination that works best for your family.

Orange Chicken Stir-Fry

Although this delicious stir-fry includes vegetables, it required no chopping, so it actually takes very little time to prepare. Serve it alongside some instant brown rice, and you're ready to go.

Chicken Fried Rice

This recipe calls for canned chicken, so it's very easy to make. It's also a good recipe to have on hand for those nights when you have a little left-over chicken you want to use.

Pesto Pasta

Here's a really easy recipe that uses store-bought pesto sauce and fresh grape tomatoes. Serve it alongside a fresh salad and some bread, and dinner's will be on the table in minutes.

Tomato Cheese Fish Fillets

This is an awesome, super-easy microwave recipe! Also, because the recipe calls for two different cheeses on top of the fish, it's a kid-friendly way to introduce fish into your children's diet.
