Make Your Evenings a Little Bit Easier With These Simple Crockpot Recipes


Do you own a crockpot or slow cooker? If not, consider picking one up through Freecycle or asking for one as a gift. Once you get into the habit of placing your ingredients in the crockpot before you leave for work in the morning, you'll wonder how you eve got by without one!

1. Cheesy Crockpot Tortellini

This is a delicious dinner! Keep in mind that you have to add the tortellini during the final hour of cooking, though; which means that you need to plan on being home at least one hour before eating. It's completely worth the wait, though, because the tortellini gets so soft you'll think you've ordered out from a fancy Italian restaurant.

2. Crockpot Apricot Chicken

What I love about this recipe is that you can put the frozen chicken breasts right into the crockpot without thawing them first. That makes it super-easy to just toss the ingredients into your crockpot early in the morning and come home to a delicious meal at the end of the day.

3. Crockpot Beef Fajitas

This is another super-easy recipe. To make sure everything is ready to go when you arrive home from work, prepare your toppings (like lettuce, tomatoes, onions, and shredded cheese) the night before. Don't forget to make sure you have sour cream on hand, as well!

4. Broccoli Rice and Chicken

This is a great "comfort food" dish. Try using brown rice for your healthiest option. Since it will have cooked all day in the crockpot, it will be super tender and delicious.

5. Crockpot Turkey Cassoulet

Cassoulet is a filling, delicious, "one-dish" meal. Just remember to add the tomatoes about a half-hour before eating. If you add them at the very beginning, when you place the other ingredients in the crockpot, the beans won't soften. Also, keep in mind that this dish requires you to soak the beans in water overnight.
